You'll definitely want to have 3 adults along on the trip. A 2-year-old will only be able to go on and enjoy a very limited number of the rides in those parks, so you'll need to take turns 'babysitting' as the other 2 of you enjoy the grown-up attractions. My sister always went on our family vacations when my daughter was young and it was a super way to travel--DD loved having her favorite aunt along, we got to do the rides she was too young for, and DH and I got an evening off now and then.

Be prepared for very long lines in all those parks--unless you pay extra for those line-hopper tickets--and have lots of creative toys and games for her to play with as you wait.

If you can afford to go back in about 2 years, then go, have fun. If this is a stretch to your budget--I'd really recommend waiting a few years until she's old enough to go on and enjoy a larger number of the rides. A lot of the stuff--while lots of fun for older kids and adults can be a bit intense for little ones.
